I have OpenEmR successfully installed, and have started creating a dummy patient profile to test the system. I noticed that the system only gives one option for the Patient Language (ENGLISH) in the patient demographics window. Also, I cannot define the patinent's ethnicity/race because the drop-down window does not contain the variables/options. Is this some installation error issue, or can I add these on somehow. I cannot seem to figure out how.

The language capability is still somewhat in early development. Currently the best language support is in Spanish and Dutch. What language are you using? You can add you own language if you select the language code in openemr/interface/globals.php. There is a howto in the documentation section. there is no installation problem the system is design like this or may be your using old version. I can suggest you that you change the software or may be you can all the things to your software by adding some languages in the software for this software enginerr can help you surely
